Usage Instructions

Soaking: Soak shirred or cut pieces in cold water for approximately 30 minutes.
Stuffing: Stuff casing tightly (5-8% larger than nominal diameter). Ensure clips are tight and don't slip.
Cooking: Steam or water cook to desired internal temperature.
Cooling: Cool slowly using intermittent showering (2 minutes on, 3 minutes off) until internal temperature reaches 115-118°F.
Storage: Avoid direct airflow during cooling. Finished products may be frozen.
