- Soaking: Soak in water below 20°C for 30 minutes
- Stuffing: Stuff 5-8% larger than nominal diameter
- Cooking: Steam or water cook to desired temperature
- Cooling: Cool slowly to 115-118°C internal temperature
- Storage: Avoid direct airflow before complete cooling
