These casings feature high oxygen and water barrier properties that extend sausage shelf life while reducing secondary packaging costs. Our polyamide casings are widely used in food industry applications including steam cooking sausages, luncheon meat, mortadella, cheese, butter, condensed milk, and pet foods.
1. Soaking: Soak shirred or cut casing pieces in cold water for approximately 30 minutes.
2. Stuffing: Stuff casing tightly, 5% to 8% larger than nominal diameter. Never under-stuff. Clip tightly to prevent slipping.
3. Cooking: Steam or water cook to desired internal temperature.
4. Cooling: Cool slowly using intermittent 2-minute on and 3-minute off showering cycles until internal temperature reaches 115-118°F. Avoid direct airflow from fans immediately after cooking.
5. Storage: Finished products may be frozen. Avoid refrigeration before proper cooling to prevent wrinkles.
